Egg Soup Breakfast

My favorite way of breaking fast (break-fast) is with egg soup.

It is also a breakfast that my LO and have shared many times.

I see it as the best nutrient-dense breakfast for a developing brain containing proteins, fats, and omegas.

For adults who want to keep their brains clear and focused, egg soup is a meal to eat and be able to effectively continue working.

If not over-cooked, eggs are easy to digest. If eggs are over-cooked smelly burps will occur.

Ingredients

The life of the chicken who lays the egg seriously matters, the yellow of the yolk is telling of just how healthy is the chicken… or not.

Organic, free-range, happy, dark yellow yolks are what to look for. (We currently are buying Vital Farms organic)

  • Dark yellow yolks indicate nutrients.

Ingredients

  • Organic free-range eggs (2 to 4)
  • Ghee or grass fed organic butter or olive oil (1 to 3 Tablespoons)
  • Sea, Mountain, or River Salt to taste (listen to your body)

Method

  • Bring the water to a boil.

  • Gently lower the eggs into the pan of boiling water with a spoon.

  • Set time for 5 to 8 minutes
    (I find when we change locations and stoves the time to boil changes… also the size of the eggs matters. (If they are small eggs 5 minutes will be good and how many eggs we are boiling at the same time increases time).

  • When your timer rings, take the pan to the sink, dump out the hot water, and run under cold water for a couple of minutes. (Some people put ice to cool off faster).

  • Peel eggs and put in bowl.

  • Add oil of choice.

  • Add pinch of salt to taste.

  • Eat Hot!
