Oven Roasted Sweet Potatoes + Simple Salad

Oven Roasted Sweet potatoes + simple salad are my go-to favorite EASY meal.

Once you have your oven roasted sweet potatoes ready, add some arugula, kraut, olive oil, tahini, red onion, dulse, and salt. You will have a super simple, yummy, and gut friendly meal.

I love how simple and easy they are to throw in the oven. You can cut them in half or roast them whole. My family prefers them cut in half or quarters with olive oil, salt, and pepper.

I love to enjoy them as healthy comfort food.

Orange foods are great for our stomachs as well as digestion and a great gut maintenance carb source.

If you (or when I am) in a place of gut repair or microbiome recalibration then these may not be medicine for you body. There is a lot of glucose in these potatoes which could feed your unfriendly bacteria.

Ingredients

  • Organic Sweet Potatoes Roasted

  • Olive oil

  • Sea, Mountain, or River Salt to taste (listen to your body)

  • Arugula

  • Kraut

  • Red Onion

  • Dulse Seaweed Flakes

  • Tahini

Method

There is more than one way to cook these potatoes.

1) Whole in the oven: (the simplest)

  • 400* for 90 minutes.

2) Cut them in half: OR Slice them thin in wedges or rounds:

  • slice the insides 1/4 inch deep
  • slather the surface in olive oil
  • salt (mountain, sea, or river)
  • add spices like cumin or curry (go heavier than you think)
  • add sprigs of rosemary or thyme (make sure to oil these too)
  • bake in the oven at 400* for 90 min (or until golden brown)

They cook and taste better if you take them out of the oven every 20 min or so to touch up the surfaces with oil from the oil on the pan. Rotate if they are cooking unevenly also.

+ These are big family fav with my homemade mayo recipe and a requested dish for potlucks.
